Capellini Pomodoro

Today was just one of those days where I was just not up to cooking (migraine 😦  which accounts for the very short blog! ). Thankfully my oldest daughter is a wonderful cook and made dinner for us, other wise it would have just been sandwiches! Instead we had a wonderful pasta dish with garlic bread. Her talent in the kitchen is always a treat and I love to see her passion for cooking. This is my daughter who is Vegan and has shown me that this way of eating is not only healthier but also quite tasty! This recipe is quite simple, but the flavor is awesome. So here’s to Chanine and her cooking adventures! :0)

Capellini Pomodoro

1/4 cup olive oil

6 cloves garlic minced

1 medium white onion diced

4-6 roma tomatoes diced (or 1 can petite diced tomatoes)

1 small can tomato paste

1/3 to 1/2 cup water

salt and pepper to taste

handful fresh basil julienned

1 16 oz. box angel hair pasta cooked and drained

parmesan cheese for topping

Heat oil in pan, add garlic and onions and saute’ until onion is translucent. Add in tomatoes, tomato paste, water, salt and pepper and heat through for about 5 minutes. Toss sauce with pasta and add basil right before serving. Top with grated parmesan cheese.
