Ice Cream..Healthy?!? Easy?!? You Bet!!!

While becoming Vegan has been pretty easy for me, for my 12-year-old daughter, it has been quite an adjustment. While she is still struggling, she definitely has come a long way in the past 7 months! One of her favorite dishes is Orange Chicken and she has made the switch to Orange Tofu with a very positive attitude! She also loves Spicy Chicken Nuggets and she now has become a big fan of my Spicy Tofu Nuggets. One of the greatest challenges for us though was finding a healthy but also yummy ice cream that doesn’t cost an arm and a leg. Thankfully to my “Obsessive Addiction”..lol… to Pinterest I was able to find an ice cream substitute that is not only great tasting and quite healthy, but also very inexpensive!! The combination of flavors is as endless as your imagination! The only catch is you need to like bananas!! 🙂

My favorite part of this ice cream is the wonderful creaminess of it. It reminds me of the soft serve ice cream I had as a child. This is our Oreo Banana Ice Cream…only 2 ingredients and Vegan!! 🙂  So our journey into health through plant-based eating goes on. I am so beyond happy I have made the change and am able to share my journey with you all! 🙂

  1. We’re dairy-free, and love banana-based “ice cream”–my favorite variation is to mix bananas with a spoonful of cocoa powder and a spoonful of peanut butter, and top with chocolate sauce. Super yummy!
